Lobster Bisque

75 g Butter (Unsalted)
90 g Plain Flour
¾ tsp Salt (Kosher)
⅛ tsp Pepper (Ground Black)
1 tsp Paprika
1 L Milk (Full Fat)
300 ml Chicken Stock (Fresh)
65 ml White Wine
3 tbsp Onion (minced)
1 Carrots (Grated)
450 g Lobster ( Fresh Cooked and lightly shredded.)
20 ml Brandy
110 g Cream (Double)
In a large saucepan, add the butter and when melted add the flour and paprika, season and stir together.
Add the milk, stock and white wine and stir until smooth and slightly thickened. Make sure you continue to stir and do not let the mixture boil as it may cause the sauce to curdle.
Add the onions and the carrots and simmer for 8-10 minutes. Add the lobster and stir through then season to taste.
Add the cognac and stir through and finally, the cream. Heat through until piping hot.
