Chow Mein

Method
For dried noodles, cook them as per the packet instructions and then cool them in cold water until you are ready to use them. For fresh noodles, cook them for 3-5 minutes in boiling water then cool them in cold water.
In a bowl add the 2 teaspoons of light soy sauce and the rice wine. Slice the chicken breast into thin shreds and place them in the bowl with the soy and rice wine to marinade for 10-12 minutes.
Add a tablespoon of oil to a hot wok or a frying pan and sauté the chicken for a few minutes then remove from the wok or frying pan and keep warm.
Drain the noodles as much as possible and wipe the wok or frying pan clean and add the other tablespoon of oil and when the pan is hot add the garlic, sauté for a few seconds, then add the peppers and the bacon lardons. Sir fry for a minute then add the noodles, soy, sugar and spring onions.
Continue to stir fry the ingredients for a further 2 minutes, add the chicken back into the pan and stir fry for 3-4 minutes. Add the sesame oil and mix through thoroughly. Serve immediately.
