Tea Eggs

4 Eggs
              500 ml Water
              2 Tea Bags (Black Tea Bags )
              90 ml Soy Sauce (Light)
              480 ml Water
              2 Star Anise(Whole)
              1 Cinnamon Sticks
              ½ tsp Chinese Five Spice
              ½ tsp Salt (Kosher)
              1 tsp Sugar (Granulated)
          Take a small saucepan of warm water and soak the eggs for 5 minutes. This will help stop the egg shells from cracking when they are boiled.
Now bring the saucepan to the boil and boil for 5 minutes. Rinse the eggs and allow them to cool enough to handle.
Using the back of a spoon, very gently crack the shells so they create a spiders web effect. This has to be done gently as if you do it too hard the shell will fall off and the soy sauce will seep under the egg shell.
Now place them back in the saucepan and add all the marinade ingredients and gently stir. Bring the saucepan to the boil and then reduce the heat to medium and cook covered for 40 minutes.
Let the eggs cool and peel carefully.
