Cucumber in Chinese Garlic Dressing

3 Garlic Clove (Minced)
½ tsp. Salt (Kosher)
1 tbsp. Rice Wine Vinegar
2 tsp. Soy Sauce (Light)
1½ tsp. Sugar (Granulated)
1 tsp. Chilli Flakes
5 Cucumber (Lebanese)
To make the marinade place the garlic, salt, rice vinegar, soy sauce, sugar and chilli flakes in a bowl and allow to infuse for 10 minutes.
Wash the cucumbers and top and tail them. Slice in half and then into slices. Place the cucumber slices in a bowl and drizzle the marinade over them. Stir to make sure they are all coated in the marinade and serve. You can make this ahead but not overnight as it will not look as fresh.
