Chinese Noodles ( Lo Mein )

450 g. Noodles ( Chinese Noodles )
30 ml. Vegetable Oil
2 Garlic (Finely Sliced)
½ in. Ginger (Fresh Finely Grated)
4 Onions (Spring Onions Finely Sliced)
500 g. Stir Fry Vegetables ( Bag of Mixed Vegetables )
45 ml. Shaoxing Wine
150 g. Chicken ( Cooked Bite Size Pieces )
30 ml. Soy Sauce (Light)
15 ml. Soy Sauce (dark)
15 ml. Oyster Sauce
½ tsp. Pepper to Taste

Cook the noodles as per the instructions on the packet but cooking them just under the time suggested as they will continue to cook whilst preparing the dish.

Heat a wok or large pan to a high heat, add the oil, once hot add the garlic, ginger and green onions and fry for 30 seconds.

Add the vegetables and stir fry for 2-3 minutes, add the wine and cook until the wine has almost evaporated, then add the chicken and noodles. Mix all the ingredients in the wok or pan thoroughly and turn the heat down to medium.

Add the light and dark soy sauce and the oyster sauce. Season with the pepper to your taste. Cook for a further 1-2 minutes combining the ingredients thoroughly and serve.
