Spicy Dan Dan Noodles

Ingredients
Method
In a mixing bowl place the sesame paste, chilli paste, soy sauce, chopped garlic, sugar, Chinese 5 spice and Sichuan pepper powder and mix together. In a separate jug mix the chilli oil and stock together then slowly add it to the mixing bowl. The oil will sit on the surface. Put to one side.
Pork Topping
In a bowl mix together the hoisin sauce, soy sauce, wine and five spice powder. Set aside.
Place your wok on a high heat and fry the minced pork until cooked breaking up any clumps as you go. Add the sauce and cook for a further minute. Put in a bowl and set aside.
Preserved Mustard Greens
Place the wok back on a medium heat and add the oil and when hot add the mustard greens and cook just to warm them through. Put them to one side. N.B. If you cannot get Mustard Greens use Kimchi instead.
Noodles and Choi Sum
Place a large saucepan of water on the heat and bring to the boil and cook your noodles to the packet instructions until the last minute of cooking when you can add the choi sum. Drain the ingredients in the saucepan thoroughly.
Presentation
Divide the Dan Dan sauce into 4 bowls. Place the noodles on top and the pork and mustard greens on top of the noodles. In a side bowl place the choi sum. Sprinkle the chopped peanuts and spring onions over the dan dan Noodles and serve.
To eat this dish, mix it all together so the sauce coats the noodles.
