Fortune Cookies

Preheat the oven to 375ºF / 190ºC
Line a baking sheet with baking paper and make sure you have written your fortune notes.
In a large bowl with a hand blender, or in a stand mixer, whip your egg whites and sugar on high for 2-3 minutes until frothy.
Add the melted butter, water, vanilla and almond extract and combine well. Add the flour and mix only until there is no visible flour left. Stop immediately as you do not want to over mix.
When you make the fortune cookies they need to be shaped immediately so i would not do too many at a time as they take a while to shape and they need to be shaped while still hot/warm. Make about 3-4 at a time.
Spoon a tablespoon of mixture onto the baking sheet and shape into a 7.5cm (3") round. Make 3-4 and bake for 7-8 minutes until light golden brown. If you overcook them they become too brittle to fold and will snap.
When the batch of fortune cookies have cooked quickly flip the circles over and fold in half so you have a semi circle.
Slip the note into the cookie and place your fortune cookie on the edge of a cup and press down to make the shape of a fortune cookie shape. Place in a muffin tin to keep their shape while they cool. Continue with the rest of the batter.
