Chinese Spicy Pork Spare Ribs

Line a tray with kitchen paper to drain the ribs on once deep fried. Add the oil to a large pan or wok on high heat and deep fry portions of the pork ribs until they are brown and crispy. Place the fried ribs on the kitchen paper and continue the process until all the ribs are deep fried.
In a large saucepan place the chicken stock, chilli bean sauce, sugar, wine, light and dark soy sauce, garlic spring onions, hoisin sauce and yellow bean sauce and mix thoroughly and bring to the boil. Add the ribs to the stock, reduce the heat to a simmer place a lid on the pot and cook on a simmer for 40-45 minutes or until they are tender.
Remove the ribs from the sauce. Reserve some of the sauce for basting the ribs. If you want to make this dish again in the future you can freeze the rest of this sauce and re-use it in the future. If you are pre preparing this dish you can stop now.
Pre heat the oven to 350ºF / 180ºC
Place a wire rack over a baking tray and arrange the ribs on the tray. Baste the ribs with the reserved sauce and place in the oven and cook for 18-20 minutes basting now and again until the ribs are golden brown.
N.B. These can also be cooked on a BBQ or under the grill in the same way.
