Wontons In Chilli Oil Sauce

Place the chicken mince in a large bowl and add the grated ginger, garlic, finely chopped spring onions, soy sauce, sesame oil salt and pepper to your taste and mix vigorously until it becomes paste like.
Place a damp cloth over the wonton wrappers to stop them from drying out.Place a small bowl of water next to you to stick the wonton wrappers together and place a wonton wrapper in the palm of your hand. Place a teaspoon of filling in the centre of the wonton wet the edges of the wonton wit h the water, fold in half into a triangle shape, tale the corners on the widest edge, wet one of them and stick the two edges together to give you a tortellini shape. Press hard to make sure it's sealed tightly.
Chilli Oil Sauce
To make the sauce place the soy sauce, lime juice, water, light brown sugar and chilli flakes in oil and mix together. Put to one side.
To cook the wontons , bring a large saucepan of water to the boil and add the wontons. Cook for 4-5 minutes or until they are floating on the top of the water. Place some wontons in a bowl pour some of the sauce over them and garnish with spring onions and a sprinkling of sesame oil.
