Method
Begin by making the batter. Place the flour and the salt into a mixing bowl and mix together. Make a well in the centre of the bowl.
In a separate bowl mix the eggs and the milk together and pour the mixture into the well in the flour mixture.
Whisk the milk and flour mixture together into a batter, it should be a pouring consistency. Place in the fridge until needed.
Preheat the oven to 220ºC / 425ºF
While waiting for the oven to heat , place some oil in a frying pan and quickly cook the sausages in the pan for 5 minutes. drain the fat off the sausages and put to one side.
Pour the reserved fat from the sausages into a baking dish and pour a very thin layer of batter into the base of the baking dish and cook in the oven for for 5 minutes to form a base.
After 5 minutes place the sausages on top of the thin layer of batter and pour the remaining batter over the sausages. Bake in the oven for 30-35 minutes or until the batter is golden brown and well risen. Serve immediately.
