Traditional British Mushy Peas

250 g Peas( Dried Marrowfat Peas)
2 tsp Baking Soda
1 L Water (Boiling)
1 tsp Salt (Kosher)
750 ml Water

In a bowl place a litre of water and dissolve 2 teaspoons of baking soda. Place the peas in the bowl making sure there is at least 7.5cm / 3" of water above the peas and leave to soak for a minimum of 12 hours.

Drain the peas and place in a saucepan with 750ml of water and bring to the boil. Reduce the heat to a medium simmer, place a lid on the pot and simmer for 30 minutes , stirring occasionally.

Add the salt and stir through. If the peas are still to watery for your liking , continue to cook with the lid off until they are the consistency you require.
