Traditional British, Sweet Treat Vegetarian

Scottish Tablet

900 g. Sugar (Castor)
250 ml. Milk (Full Fat)
115 g. Butter ( Unsalted, Cold, Cubed )
1 oz. Milk ( Tin 397g Sweetened Condensed Milk)

In a large saucepan, place the sugar and milk on a gentle heat, stir occasionally until the sugar has melted.

Pre grease a 9 x 13 inch tin with butter and set aside.

When the sugar has dissolved, add the butter and allow to melt, then add the condensed milk and mix through. Turn the heat up and stir continuously until the mixture reaches 120ºC (softball stage) on a sugar thermometre.

Remove the mixture from the heat and leave to cool slightly for a few minutes, then beat the mixture with a wooden spoon for a good few minutes.

Pour the mixture into the pre greased tin and level out with the back of the spoon, making sure you get it fairly level and leave it to set for 2-3 hours, ideally over night. If you want to score the top of the tablet for ease of cutting later, do so after 30 minutes of leaving it to set.

For a more rustic look just break the tablet into pieces.
