Spicy and Sour Green Mango Salad (Yam Ma-Muang Koong Sod)

240 g Mango (Grated Raw Green Mango)
              12 Shallots (Thai Shallots) or 4 Banana Shallot
              4 Coriander (Roots) Finely Chopped
              3 tbsp Coconut (Toasted)
              3 tbsp Peanuts (Roasted) Roughly Chopped
              4 Chilli (Birds Eye ) To Your Taste
              4 Garlic Cloves
              2 tbsp Fish Sauce
              2 tbsp Tamarind Juice
              1 tbsp Lime Juice
              1 tbsp Sugar (Palm)
              10 g Coriander (Fresh, Roughly Chopped)
          Place the birds eye chillies and garlic in a mortar and pestle and pond together. Set aside.
In a mixing bowl add the fish sauce, tamarind juice, lime juice, palm sugar and the paste from the mortar and pestle and mix together.
Add to the mixing bowl the grated raw mango, chopped coriander stem, sliced shallots, chopped roasted peanuts and roasted coconut and toss gently.
Serve on a serving plate garnished with the coriander leaves.
