Strawberry Fool

Method
250 g. Strawberries (Fresh and Hulled)
3 tbsp. Sugar (Icing)
250 ml. Cream (Double)
Using a fork mash the strawberries with the icing sugar until they are soft but not puréed.
Place the cream in a bowl and whip until you have soft peaks.
Fold the purée through the whipped cream gently to create a marbling effect.
Spoon into your serving bowls or glasses and decorate the top with some fresh pieces or strawberry or even some purée.
This dessert is often served with a thin shortbread biscuit.
