Welsh Rarebit

2 Slices of Good Quality Crusty Bread
125 g. Cheese - Cheddar (Strong)
3 tbsp. Milk or Ale if preferred
30 g. Butter
¼ tsp. Salt and Pepper (to your taste)
1 tsp. Mustard (Dijon)
Place a heavy based saucepan on the heat and add the milk and cheese. Stir over a moderate to low heat until the cheese melts and the mixture resembles a thick cream.
Add the butter, salt, pepper, and mustard. Taste and adjust seasoning if necessary.
Place it back on the heat and heat through but do not allow it to boil.
Place the crusty bread on a baking dish and pour the mixture over the top and place under a hot grill until the cheese bubbles and turn a rich brown.
The cheese will overflow the bread slices. Serve immediately.
