Bubble and Squeak

50 g. Butter
500 g. Cold Leftover Mashed Potatoes
275 g. Cabbage (Sprouts or Kale) Leftover from a cooked dinner
1 Small Onion (Finely Chopped)
½ tsp. Salt and Pepper (to your taste)

In a mixing bowl place the cold mashed potato. Shred the cabbage and add to the mashed potato.

In a frying pan melt 25g of the butter and add the chopped onion and sauté the onion until translucent. Add the onion to the potato mixture and mix thoroughly. Season to your taste.

In the same frying pan add the 25g of butter and add the potato mixture and press it down flat to look similar to a Spanish tortilla. Cook on a low heat until the underneath is a golden brown colour.

Place a plate over the frying pan and invert the potato mixture and then slide it back into the frying pan cook side facing up and cook until the bottom is golden and cooked through.

Slide onto serving plate and cut into wedges. Many people serve this with a poached or fried egg on the top of the wedge.
