Singing Hinnies

450 g. Plain Flour
¼ tsp. Baking Powder
½ tsp. Cream of Tarter
½ tsp. Salt (Table)
110 g. Butter ( Unsalted, Very Cold, Cubed )
110 g. Lard Very Cold and Cubed
190 g. Mixed Fruit
1 Lemon (Zest of a lemon)
5 tbsp. Milk (Full Fat)
10 g. Lard To Cook With
2 tbsp. Sugar (Castor Sugar to Sprinkle on Top)

In a large mixing bowl add the flour, baking powder, cream of tarter, salt, lard and butter and using your fingertips, rub the fat into the flour until you achieve a fine breadcrumb mixture. Do not overwork.

Place in a mixer with a dough hook and add the fruit and mix through, now add the milk, don't add it all at once as you may not need all of it and you don't want a wet mixture.

Lightly flour your work surface and place the dough on the work surface and gently roll out to a quarter inch thickness and cut out circles with a cookie cutter.

Heat a frying pan and holding the lard in some greaseproof paper, carefully rub a little on the surface of the frying pan and cook the hinnies on one side until golden then turn over and cook the other side until golden. Place on a cooling rack and sprinkle with sugar. Continue cooking in batches until all the hinnies are cooked.
