Traditional British, Sweet Treat Vegetarian Gluten Free, Sugar (Granulated)

Peanut Brittle

450 g. Sugar (Granulated)
25 g. Butter
2 tbsp. Malt Vinegar
3 tbsp. Syrup (Golden)
200 g. Peanuts (Salted) as many as you like

Grease a non stick baking tray with butter and sprinkle the peanuts over the base and set aside.

Place the sugar butter, malt vinegar and golden syrup in a heavy based saucepan.

Turn the hob / stove top onto medium high heat and place the saucepan on the heat to melt the sugars etc. Gradually bring the contents to the boil and allow the sugars to turn a lovely golden colour. This may take a few minutes.

When the toffee is a rich golden colour, remove it from the heat and pour it over the peanuts on the baking tray, covering all the peanuts. Allow the toffee to cool for 60 minutes, then brake into shards.

You can use any nuts you like but if they are large chop them up first. This is an ideal gift for holidays or Christmas.
