2 Sheets Of Puff Pastry, Thawed
1¼ cu Ground Almonds (Almond Meal)
½ cu Granulated Sugar
½ cu Unsalted Butter, Softened
2 Large Eggs
1 tsp Pure Vanilla Extract
¼ tsp Almond Extract (optional)
1 Small Trinket Or Dried Bean (optional)
1 Egg Yolk, Beaten With 1 Tbsp Water (for Egg Wash)
Powdered Sugar, For Dusting (optional)

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large bowl, combine the ground almonds, sugar, butter, 1 egg, vanilla extract, and almond extract, if using. Mix until smooth and creamy.

Roll out one sheet of puff pastry on a lightly floured surface, and transfer it to the prepared baking sheet.

Spread the almond mixture evenly over the puff pastry, leaving a 1-inch border around the edges. If using a trinket or bean, hide it somewhere in the almond mixture.

Roll out the second sheet of puff pastry and place it on top of the almond mixture, aligning it with the bottom layer. Press the edges together to seal.

Brush the top of the galette with the egg wash. Use a sharp knife to score a decorative pattern on the surface and create a few small vents to allow steam to escape during baking.

Bake the galette for 30-35 minutes, or until puffed and golden brown. If desired, dust with powdered sugar before serving. Allow the galette to cool slightly before cutting into wedges.
