Method
In a small bowl, sprinkle the gelatin powder over the cold water and let it stand for 5 minutes to soften.
In a medium saucepan, combine the heavy cream, milk, and sugar. Heat the mixture over medium heat until the sugar is dissolved and the mixture is steaming but not boiling.
Remove the saucepan from the heat and stir in the softened gelatin until completely dissolved. Add the vanilla extract and stir to combine.
Pour the mixture into six ramekins or dessert cups. Cover with plastic wrap and refrigerate for at least 4 hours or overnight until the Panna Cotta is set.
To make the fruit sauce (if using), combine the berries, sugar, and lemon juice in a small saucepan. Cook over medium heat until the berries are softened and the sauce is slightly thickened, about 10 minutes. Let the sauce cool before serving.
To serve, run a knife around the edge of each Panna Cotta and invert onto a plate or serve directly in the dessert cups
