Shrimp Scampi

Serves 4

Ingredients

Method

1 lb. Large Shrimp, Peeled And Deveined
½ cup Dry White Wine
½ cup Chicken Or Vegetable Broth
4 Garlic Cloves, Minced
4 tbsp. Unsalted Butter
2 tbsp. Olive Oil
¼ cup Fresh Parsley, Chopped
1 Lemon, Juiced And Zested
½ tsp. Red Pepper Flakes (Optional)
¼ tsp. Salt
¼ tsp. Black Pepper

In a large skillet, heat the olive oil over medium heat. Add the shrimp to the skillet in a single layer and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.

Add the garlic to the skillet and cook for 1 minute until fragrant. Be careful not to burn the garlic.

Deglaze the skillet with the white wine, scraping up any browned bits. Cook for 2-3 minutes until the wine has reduced by half.

Add the chicken or vegetable broth, lemon juice, lemon zest, red pepper flakes (if using), salt, and black pepper to the skillet. Bring to a simmer and cook for 2-3 minutes.

Stir in the butter until melted and the sauce is slightly thickened. Add the cooked shrimp and chopped parsley to the skillet, tossing to coat the shrimp with the sauce.

Serve the Shrimp Scampi immediately over pasta or with crusty bread for dipping in the sauce.
