Bruschetta al Pomodoro

4 Medium Tomatoes, Diced
1 Small Red Onion, Finely Chopped
1 Garlic Clove, Minced
¼ cup Fresh Basil, Chopped
¼ cup Extra Virgin Olive Oil, Plus More For Drizzling
1 French Baguette Or Italian Bread, Sliced Diagonally Into 1/2-inch Thick Pieces
1 Garlic Clove, Cut In Half
¼ tsp. Salt
¼ tsp. Black Pepper
In a medium mixing bowl, combine the diced tomatoes, red onion, minced garlic, chopped basil, 1/4 cup of olive oil, salt, and black pepper. Stir well and let the mixture sit for at least 15 minutes for the flavors to meld.
Preheat a grill or grill pan over medium-high heat.
Brush both sides of the bread slices with a little olive oil and grill for 1-2 minutes per side, until lightly charred and crispy.
While the bread is still warm, rub one side of each slice with the cut side of the halved garlic clove.
Top the grilled bread slices with the tomato mixture, dividing it evenly. Drizzle with a little more olive oil if desired.
Serve the Bruschetta al Pomodoro immediately as an appetizer or light snack.
