Zabaglione

6 Egg Yolks
½ cu Granulated Sugar
½ cu Marsala Wine
1 Zest Of 1 Lemon
½ cu Fresh Berries, For Serving (Optional)

In a mixing bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

Place the mixing bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water.

Add the Marsala wine and lemon zest to the egg yolk mixture, then whisk constantly until the mixture thickens and triples in volume, about 10-15 minutes.

Remove the mixing bowl from the heat and continue to whisk the zabaglione until it cools to room temperature.

Divide the zabaglione among four serving glasses or bowls.

Serve the zabaglione immediately, garnished with fresh berries, if desired.
