Penne alla Vodka

1 lb. Penne Pasta
2 tbsp. Unsalted Butter
1 Small Onion, Finely Chopped
2 Garlic Cloves, Minced
1 cup Tomato Puree
½ cup Heavy Cream
¼ cup Vodka
Salt And Black Pepper, To Taste
¼ cup Chopped Fresh Basil
Grated Parmesan Cheese, For Serving
Cook the penne pasta in a large pot of boiling salted water, according to the package instructions, until al dente.
In a large skillet, melt the butter over medium heat. Add the finely chopped onion and minced garlic and cook until softened and fragrant, about 5 minutes.
Pour the tomato puree into the skillet and stir to combine. Cook for 5-7 minutes, or until the tomato puree has thickened and reduced slightly.
Stir in the heavy cream and vodka and season the sauce with salt and black pepper, to taste.
Add the cooked penne pasta to the skillet and toss to coat with the sauce.
Sprinkle the chopped fresh basil over the pasta and toss again.
Serve the Penne alla Vodka hot, garnished with grated Parmesan cheese, if desired.
