Yangzhou Fried Rice (Yang Zhou Chao Fan)

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
In the same skillet, heat another tablespoon of vegetable oil. Add the garlic and cook until fragrant, about 30 seconds.
Add the cooked ham or Chinese sausage, shrimp, peas and carrots, and green onions to the skillet. Stir-fry for 2-3 minutes.
Add the cold cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry for another 3-4 minutes.
Stir in the cooked eggs, soy sauce, oyster sauce, white pepper, and salt. Mix well to combine all ingredients.
Serve hot, garnished with additional chopped green onions if desired.
