Zha Jiang Mian (Noodles with Soybean Paste)

Serves 4

Ingredients

Method

8 oz. Chinese Wheat Noodles (or Spaghetti)
1 tbsp. Vegetable Oil
½ lb. Ground Pork
¼ cup Yellow Soybean Paste
¼ cup Hoisin Sauce
1 tbsp. Soy Sauce
1 tbsp. Sugar
½ cup Water
1 Cucumber, Julienned
1 Carrot, Julienned
2 Green Onions, Chopped

Cook the noodles according to the package instructions. Drain and set aside.

In a large skillet or wok, heat the vegetable oil over medium heat. Add the ground pork and cook until browned and cooked through.

Stir in the yellow soybean paste, hoisin sauce, soy sauce, sugar, and water. Bring the mixture to a boil, then reduce the heat to low and simmer for 5-10 minutes, or until the sauce has thickened.

Divide the cooked noodles among four bowls. Top each bowl with a generous portion of the soybean paste sauce.

Serve the noodles with the julienned cucumber, carrot, and chopped green onions on the side, allowing each person to add their desired amount of fresh vegetables to their bowl.
