Congee (Zhou)

1 cup Jasmine Rice
8 cups Water Or Chicken Broth
½ tsp. Salt
Optional Toppings: Sliced Green Onions, Chopped Cilantro, Shredded Chicken, Sliced Chinese Sausage, Minced Garlic, Soy Sauce, Sesame Oil

In a large bowl, rinse the jasmine rice under cold water until the water runs clear. Drain the rice and set it aside.

In a large pot, combine the rinsed rice, water or chicken broth, and salt. Bring the mixture to a boil.

Reduce the heat to low and simmer the rice for 1.5-2 hours, stirring occasionally to prevent sticking. The congee should be thick and creamy.

Serve the congee hot with your choice of optional toppings.
