Chow Mein (Chao Mian)

½ lb Chow Mein Noodles (or Thin Egg Noodles)
2 tbsp Vegetable Oil
½ lb Thinly Sliced Chicken, Beef, Or Shrimp (optional)
2 cu Thinly Sliced Vegetables (such As Bell Peppers, Carrots, And Bean Sprouts)
1 tbsp Minced Garlic
1 tbsp Minced Ginger
3 tbsp Soy Sauce
1 tbsp Oyster Sauce
1 tbsp Shaoxing Wine (or Dry Sherry)
½ tsp Sugar
¼ tsp Ground White Pepper
2  Green Onions, Cut Into 1-inch Lengths

Cook the chow mein noodles according to the package instructions. Drain the noodles and set them aside.

Heat 1 tablespoon of the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced protein (if using) and cook for 3-4 minutes, or until cooked through. Remove the protein from the skillet and set it aside.

In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the sliced vegetables, minced garlic, and minced ginger and cook for 3-4 minutes, or until the vegetables are tender but still crisp.

4. Add the cooked chow mein noodles to the skillet, along with the cooked protein (if using), soy sauce, oyster sauce, Shaoxing wine, sugar, and white pepper. Stir-fry the mixture for 2-3 minutes, or until the noodles are heated through and evenly coated with the sauce.

Stir in the green onions and cook for an additional 30 seconds.

Serve the Chow Mein hot with additional soy sauce or hot sauce on the side, if desired.
