Serves 4
Ingredients
Method
1 lb Green Beans, Trimmed
              2 tbsp Vegetable Oil
1 tbsp Sichuan Chili Bean Paste (Doubanjiang)
              1 tbsp Minced Garlic
              1 tbsp Minced Ginger
              1 tbsp Soy Sauce
½ tbsp Black Vinegar (or Balsamic Vinegar)
              ¼ tsp Sugar
¼ tsp Ground Sichuan Pepper (optional)
2 Green Onions, Cut Into 1-inch Lengths
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the green beans and cook for 4-5 minutes, or until they are tender and slightly blistered.
Add the Sichuan chili bean paste, minced garlic, and minced ginger to the skillet and cook for 1 minute, or until fragrant.
Stir in the soy sauce, black vinegar, sugar, and ground Sichuan pepper (if using). Cook for an additional 1-2 minutes, or until the green beans are evenly coated with the sauce.
Stir in the green onions and cook for an additional 30 seconds.
Serve the Sichuan String Beans hot as a side dish or with steamed white rice for a light main course.
