Shrimp Fried Rice (Xia Ren Chao Fan)

3 cu Cooked White Rice, Cooled
2 tbsp Vegetable Oil
½ lb Peeled And Deveined Shrimp
2 cu Diced Vegetables (such As Peas, Carrots, And Corn)
2 Large Eggs, Beaten
1 tbsp Minced Garlic
1 tbsp Minced Ginger
3 tbsp Soy Sauce
1 tsp Sesame Oil
2 Green Onions, Thinly Sliced

In a large skillet or wok, heat 1 tablespoon of the vegetable oil over medium-high heat. Add the shrimp and cook for 2-3 minutes, or until they are pink and cooked through. Remove the shrimp from the skillet and set it aside.

In the same skillet, add the diced vegetables and cook for 3-4 minutes, or until they are tender. Add the minced garlic and minced ginger and cook for 1 minute, or until fragrant. Push the vegetables to the side of the skillet, creating a well in the center.

Add the beaten eggs to the well in the center of the skillet and cook for 1-2 minutes, or until they are scrambled. Stir the eggs into the vegetables.

Add the cooked rice, cooked shrimp, soy sauce, and sesame oil to the skillet. Stir-fry the mixture for 2-3 minutes, or until the rice is heated through and evenly coated with the sauce.

Stir in the sliced green onions and serve the Shrimp Fried Rice hot.
