Chicken with Snow Peas

Serves 4

Ingredients

Method

1 lb. Boneless, Skinless Chicken Breasts, Thinly Sliced
2 tbsp. Vegetable Oil
2 cups Snow Peas, Trimmed
1 tbsp. Minced Garlic
1 tbsp. Minced Ginger
¼ cup Chicken Broth
2 tbsp. Soy Sauce
1 tbsp. Oyster Sauce
1 tbsp. Cornstarch Mixed With 1.0 Tbsp Water
1 tsp. Sesame Oil
2 Green Onions, Thinly Sliced

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 4-5 minutes, or until browned and cooked through. Remove the chicken from the skillet and set it aside.

In the same skillet, add the snow peas and cook for 2-3 minutes, or until they are crisp-tender. Add the minced garlic and minced ginger and cook for 1 minute, or until fragrant.

Stir in the chicken broth, soy sauce, and oyster sauce. Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 minutes.

Return the cooked chicken to the skillet and stir to combine with the snow peas and sauce.

Stir in the cornstarch mixture and cook for an additional 1-2 minutes, or until the sauce has thickened.

Remove the skillet from the heat and stir in the sesame oil and sliced green onions.

Serve the Chicken with Snow Peas hot with steamed white rice.
