Wontons in Chili Oil (Hong You Chao Shou)

½ lb. Ground Pork
2 tbsp. Finely Chopped Green Onions
1 tbsp. Soy Sauce
1 tsp. Minced Ginger
1 tsp. Sesame Oil
¼ tsp. Salt
¼ tsp. Ground White Pepper
1 Wonton Wrappers (about 50 Wrappers)
¼ cup Chili Oil
2 tbsp. Soy Sauce
1 tbsp. Black Vinegar
1 tbsp. Sugar
1 tbsp. Minced Garlic
1 tbsp. Sesame Seeds
½ tsp. Ground Sichuan Peppercorns

In a large bowl, combine the ground pork, chopped green onions, soy sauce, minced ginger, sesame oil, salt, and white pepper. Mix well to combine.

Place a small spoonful of the pork mixture in the center of each wonton wrapper. Wet the edges of the wrapper with water, fold in half to form a triangle, and press the edges together to seal. Bring the two opposite corners of the triangle together and press them firmly to seal. Repeat with the remaining wrappers and filling.

3. Bring a large pot of water to a boil. Cook the wontons in batches for 3-4 minutes, or until they float to the surface and are cooked through. Remove the cooked wontons with a slotted spoon and set aside.

In a small bowl, whisk together the chili oil, soy sauce, black vinegar, sugar, minced garlic, sesame seeds, and ground Sichuan peppercorns to create the chili oil sauce.

To serve, divide the cooked wontons among 4 serving bowls. Pour the chili oil sauce over the wontons and toss to coat evenly.

Serve the Wontons in Chili Oil hot, garnished with additional chopped green onions if desired.
