Chinese Steamed Buns (Mantou)

1 cup Warm Water
2 tsp. Active Dry Yeast
2 tbsp. Sugar
2 cups All-Purpose Flour
1 cup Cake Flour
½ tsp. Salt
2 tbsp. Vegetable Oil

In a small bowl, mix the warm water, active dry yeast, and sugar. Let the mixture sit for 5-10 minutes, or until foamy.

In a large bowl, combine the all-purpose flour, cake flour, and salt. Add the yeast mixture and vegetable oil, and mix until a dough forms.

Knead the dough on a lightly floured surface for 5-6 minutes, or until smooth and elastic. Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Once the dough has risen, punch it down and roll it out into a large rectangle. Cut the rectangle into 12 equal pieces.

Shape each piece into a smooth ball and place them on squares of parchment paper. Cover the dough balls with a clean cloth and let them rise for an additional 30 minutes, or until slightly puffed.

Bring water to a boil in a steamer. Place the dough balls (still on the parchment paper) in the steamer basket, leaving space between them for expansion. Cover and steam the buns for 12-15 minutes, or until they are cooked through and fluffy.

Serve the Chinese Steamed Buns (Mantou) hot, plain or filled with your favorite ingredients.
