Shrimp Toast

½ lb. Raw Shrimp, Peeled, Deveined, And Finely Chopped
1 Egg White
¼ cup Finely Chopped Water Chestnuts
2 tbsp. Finely Chopped Green Onions
1 tsp. Soy Sauce
½ tsp. Sesame Oil
½ tsp. Grated Ginger
¼ tsp. Salt
1 in. Ground White Pepper
4 Slices Of White Bread, Crusts Removed
½ cup Sesame Seeds
1 cup Vegetable Oil, For Frying

In a medium bowl, combine the chopped shrimp, egg white, chopped water chestnuts, chopped green onions, soy sauce, sesame oil, grated ginger, salt, and ground white pepper. Mix until well combined.

Cut each slice of bread into four triangles. Spread the shrimp mixture evenly onto each bread triangle, then press the shrimp side of the bread into the sesame seeds to coat.

Heat the vegetable oil in a large frying pan over medium-high heat. Fry the bread triangles, shrimp side down, for 2-3 minutes, or until golden brown and crispy. Turn the shrimp toast over and cook for another 1-2 minutes, or until the bread is also golden brown and crispy.

Use a slotted spoon to transfer the fried Shrimp Toast to a paper towel-lined plate to drain. Serve hot with sweet and sour sauce or another dipping sauce of your choice.
