Potstickers (Guo Tie)

In a large bowl, combine the ground pork, chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, oyster sauce, sesame oil, and ground white pepper. Mix until well combined.
Place a small spoonful of the filling mixture in the center of a dumpling wrapper. Wet the edges of the wrapper with a little water, fold the wrapper in half, and press the edges together to seal. Repeat with the remaining filling and wrappers.
Heat a large non-stick skillet with a lid over medium heat. Add 1-2 tablespoons of vegetable oil to the skillet. Arrange the potstickers in the skillet, seam side up, and cook for 1-2 minutes, or until the bottoms are golden brown.
Carefully add 1/4 cup of water to the skillet, cover with the lid, and let the potstickers steam for 5-7 minutes, or until the water has evaporated and the potstickers are cooked through.
While the potstickers are cooking, prepare the dipping sauce by combining the soy sauce, rice vinegar, sugar, sesame oil, chili oil (if using), and chopped green onions in a small bowl.
Serve the cooked potstickers with the dipping sauce on the side.
