Lo Mein (Lao Mian)

8 oz. Lo Mein Noodles
2 tbsp. Vegetable Oil, Divided
1 Onion, Thinly Sliced
1 Red Bell Pepper, Thinly Sliced
1 cup Julienned Carrots
1 cup Sliced Mushrooms
2 Minced Garlic
1 tbsp. Grated Ginger
1 Protein Of Choice (e.g., Chicken, Shrimp, Tofu, Etc.), Cooked And Sliced (optional)
¼ cup Soy Sauce
2 tbsp. Oyster Sauce
1 tsp. Sugar
1 tsp. Sesame Oil
2 Green Onions, Sliced

Cook the lo mein noodles according to the package instructions. Drain and rinse with cold water. Set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the onion, red bell pepper, carrots, and mushrooms. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.

Add the minced garlic and grated ginger to the skillet and cook for 30 seconds, or until fragrant.

If using a protein, add it to the skillet with the vegetables and stir-fry for 1-2 minutes, or until heated through.

In a small bowl, combine the soy sauce, oyster sauce, sugar, and sesame oil. Mix well.

Add the cooked lo mein noodles and the sauce mixture to the skillet with the vegetables and protein (if using). Stir-fry for 2-3 minutes, or until the noodles are heated through and the sauce is well distributed.

Garnish the Lo Mein with sliced green onions and serve immediately.
