Chinese Scallion Omelette (Cong You Ji Dan Bing)

4 Large Eggs
1 cup Chopped Scallions (green Onions)
½ tsp. Salt
¼ tsp. Ground Black Pepper
1 tbsp. Soy Sauce
1 tbsp. Water
2 tbsp. Vegetable Oil

In a mixing bowl, whisk together the eggs, scallions, salt, and ground black pepper.

In a separate small bowl, combine the soy sauce and water. Set aside.

Heat the vegetable oil in a large nonstick skillet over medium heat.

Pour the egg mixture into the skillet, swirling to evenly distribute the scallions.

Cook the omelette for 3-4 minutes, or until the bottom is golden brown and the top is mostly set. Carefully flip the omelette and cook for an additional 2-3 minutes, or until the other side is golden brown.

Slide the omelette onto a serving plate and drizzle with the soy sauce mixture.

Serve the Chinese Scallion Omelette hot with steamed rice or as a side dish.
