Chinese Glutinous Rice Cake (Nian Gao)

2 cups Glutinous Rice Flour
¾ cup Sugar
1 cup Water
1 tbsp. Vegetable Oil
½ tsp. Almond Extract (optional)

In a mixing bowl, combine the glutinous rice flour and sugar.

In a saucepan, heat the water until it reaches a boil. Gradually pour the boiling water into the flour mixture while stirring to combine.

Add the vegetable oil and almond extract (if using) to the batter and mix well.

Pour the batter into a greased 8-inch round cake pan or an 8-inch square baking dish.

Steam the cake over high heat for 45-60 minutes, or until a toothpick inserted in the center comes out clean.

Remove the cake from the steamer and let it cool to room temperature.

Once cooled, transfer the cake to a cutting board and cut it into slices or squares. The Chinese Glutinous Rice Cake can be served as is, or pan-fried for a crispy exterior.
