Som Tam (Green Papaya Salad)

Method
2 cups Green Papaya, Shredded
1 Carrot, Shredded
2 Tomatoes, Sliced
2 Thai Long Beans
2 Garlic, Minced
2 Red Chilies, Sliced
2 tbsp. Fish Sauce
1 tbsp. Sugar
2 tbsp. Lime Juice
2 tbsp. Dried Shrimp
¼ cup Roasted Peanuts, Crushed
In a large bowl, combine the shredded green papaya, carrot, tomatoes, long beans, garlic, and red chilies.
In a small bowl, whisk together the fish sauce, sugar, and lime juice until the sugar is dissolved.
Pour the dressing over the salad, and toss well to combine.
Just before serving, stir in the dried shrimp and crushed peanuts.
