Yum Woon Sen (Glass Noodle Salad)

6 oz. Glass Noodles
1 lb. Shrimp, Peeled And Deveined
2 Tomatoes, Sliced
1 Onion, Thinly Sliced
2 Red Chilies, Sliced
3 tbsp. Fish Sauce
2 tbsp. Lime Juice
1 tbsp. Sugar
¼ cup Fresh Cilantro, Chopped
¼ oz. Mint Leaves, Chopped
Soak the glass noodles in warm water for about 10 minutes, or until soft. Drain well.
Bring a pot of water to a boil. Add the shrimp and cook until they turn pink. Remove with a slotted spoon and set aside.
In the same water, add the soaked and drained noodles and cook for 2-3 minutes, or until soft. Drain and rinse under cold water.
In a large bowl, combine the cooked shrimp, cooked noodles, tomatoes, onion, and red chilies.
In a small bowl, whisk together the fish sauce, lime juice, and sugar until the sugar is dissolved.
Pour the dressing over the salad, and toss well to combine.
Just before serving, stir in the cilantro and mint leaves. Serve the salad chilled or at room temperature.
