Thai, Main Course, Jasmine Rice Pineapple (Fresh)

Khao Pad Sapparot (Pineapple Fried Rice)

2 tbsp. Vegetable Oil
2 Eggs, Beaten
2 cups Cooked Jasmine Rice, Cooled
1 Onion, Chopped
2 Garlic, Minced
½ cup Carrots, Diced
½ cup Green Peas
½ cup Cooked Shrimp Or Chicken, Optional
1 cup Fresh Pineapple, Diced
2 tbsp. Soy Sauce
2 tbsp. Fish Sauce
½ tsp. Sugar
¼ cup Cashews, Optional
¼ cup Green Onions, Chopped
¼ cup Fresh Cilantro, Chopped

Heat 1 tablespoon of the oil in a large pan or wok over medium heat. Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.

In the same pan, heat the remaining oil. Add the onion and garlic, and fry until fragrant.

Add the carrots and green peas, and cook until softened.

Add the cooked rice and stir well to combine. If using, add the cooked shrimp or chicken and diced pineapple.

Stir in the soy sauce, fish sauce, and sugar. Cook for a couple of minutes.

Stir in the scrambled eggs, cashews if using, green onions, and cilantro. Serve the fried rice hot.
