Pad See Ew (Stir-fried Noodles)

2 tbsp. Vegetable Oil
2 Garlic, Minced
1 lb. Chicken, Pork, Or Beef, Sliced
2 Eggs, Beaten
8 oz. Wide Rice Noodles, Soaked In Warm Water And Drained
2 tbsp. Dark Soy Sauce
2 tbsp. Oyster Sauce
1 tbsp. Sugar
2 cups Chinese Broccoli Or Regular Broccoli, Chopped
Heat 1 tablespoon of the oil in a large pan or wok over medium heat. Add the garlic and meat of choice, and stir-fry until the meat is fully cooked.
Push the meat to one side of the pan, and pour the beaten eggs into the other side. Scramble the eggs and mix with the meat.
Add the drained noodles and stir well to combine.
Stir in the dark soy sauce, oyster sauce, and sugar. Mix well to ensure the noodles are evenly coated.
Add the chopped broccoli and stir-fry until the broccoli is cooked but still crisp.
Serve the stir-fried noodles hot.
