Thai, Main Course, Chicken Thighs (Sliced)

Pad Woon Sen (Stir-fried Glass Noodles)

6 oz. Glass Noodles
2 tbsp. Vegetable Oil
2 Garlic, Minced
1 Onion, Sliced
1 Carrot, Julienned
1 Bell Pepper, Sliced
½ lb. Chicken, Pork, Or Shrimp, Sliced
2 tbsp. Soy Sauce
2 tbsp. Oyster Sauce
1 tbsp. Sugar
2 Eggs, Beaten
¼ cup Green Onions, Chopped

Soak the glass noodles in warm water for about 10 minutes, or until soft. Drain well.

Heat the vegetable oil in a large pan or wok over medium heat.

Add the garlic and onion, and stir-fry until fragrant.

Add the carrot and bell pepper, and stir-fry until just tender.

Add the meat or shrimp of choice, and stir-fry until fully cooked.

Stir in the soaked and drained noodles.

Add the soy sauce, oyster sauce, and sugar, and stir well to combine.

Push the noodle mixture to one side of the pan, and pour the beaten eggs into the other side. Scramble the eggs and mix with the noodles.

Just before serving, stir in the chopped green onions.
