Thai Fresh Rolls (Por Pia Sod)

10 Rice Paper Wrappers
2 cups Lettuce, Shredded
1 Carrot, Julienned
1 Cucumber, Julienned
½ cup Fresh Mint Leaves
½ cup Fresh Cilantro Leaves
½ lb. Cooked Shrimp Or Chicken, Sliced (Optional)

Prepare a large bowl of warm water. Dip each rice paper wrapper in the water until it softens, then lay it flat on a clean surface.

Place a small amount of lettuce, carrot, cucumber, mint, cilantro, and shrimp or chicken if using, in the middle of the rice paper.

Fold in the sides of the rice paper and roll it up tightly, starting from the bottom. Repeat with the remaining ingredients.

Serve the fresh rolls whole or cut in half, with a side of peanut sauce or sweet chili sauce for dipping.
