Gai Yang (Grilled Chicken)

1 Whole Chicken, Cut Into Quarters
4 Garlic, Minced
1 Lemongrass, Minced
1 tbsp Coriander Roots Or Cilantro Stems, Minced
2 tbsp Fish Sauce
1 tbsp Soy Sauce
1 tbsp Sugar
1 tbsp Black Pepper
2 tbsp Vegetable Oil

In a large bowl, combine the garlic, lemongrass, coriander roots or cilantro stems, fish sauce, soy sauce, sugar, black pepper, and vegetable oil.

Add the chicken quarters and rub the marinade all over them. Marinate for at least 2 hours, or overnight for best results.

Preheat a grill or grill pan over medium heat. Grill the chicken quarters for about 15-20 minutes on each side, or until fully cooked and the skin is nicely charred.

Serve the grilled chicken hot, ideally with a side of spicy tamarind dipping sauce and sticky rice.
