Pla Pao (Grilled Fish)

1 Whole Fish (such As Tilapia, Snapper, Or Mackerel), Scaled And Gutted
3 Stalks Lemongrass, Bruised And Cut Into Pieces
4 Kaffir Lime Leaves
2 cups Coarse Salt
2 tbsp. Flour
1 tbsp. Water
Rinse the fish and pat it dry. Stuff the fish cavity with the lemongrass pieces and kaffir lime leaves.
In a bowl, mix together the coarse salt, flour, and water until it forms a thick paste.
Coat the entire fish with the salt paste, ensuring it's completely covered.
Preheat a grill over medium heat. Grill the fish for about 15-20 minutes on each side, or until the salt crust is golden and the fish is cooked through.
Crack and remove the salt crust before serving. Be careful not to let the salt get onto the fish flesh.
Serve the grilled fish with a side of spicy seafood sauce and steamed vegetables or salad.
