Thai Fried Chicken (Gai Tod)

1 lb. Chicken Pieces
4 Garlic, Minced
1 tbsp. Fish Sauce
1 tbsp. Soy Sauce
1 tsp. White Pepper
1 tsp. Turmeric
1 tsp. Coriander Seeds, Crushed
1 cup Rice Flour
Vegetable Oil For Frying
In a large bowl, combine the garlic, fish sauce, soy sauce, white pepper, turmeric, and coriander seeds. Add the chicken pieces and rub the marinade all over them. Marinate for at least 1 hour, or overnight for best results.
Heat the vegetable oil in a deep pan over medium heat.
Coat each marinated chicken piece in rice flour, then deep-fry in the hot oil until golden brown and fully cooked.
Drain the fried chicken on paper towels before serving. It's typically served with a side of sweet chili sauce and sticky rice.
