Thai Omelette (Kai Jiew)

3 Eggs
1 tbsp. Fish Sauce
1 tbsp. Rice Flour
2 tbsp. Water
Vegetable Oil For Frying
In a bowl, whisk together the eggs, fish sauce, rice flour, and water until well combined.
Heat a generous amount of vegetable oil in a pan over medium-high heat.
Pour the egg mixture into the hot oil. Cook until the bottom is golden and crispy, then flip and cook the other side until golden and crispy.
Drain the omelette on paper towels before serving. It's typically served with a side of steamed jasmine rice and a spicy dipping sauce.
