Pad Prik Gaeng (Stir-fry with Red Curry Paste)

1 lb. Pork Or Chicken, Cut Into Bite-sized Pieces
2 tbsp. Red Curry Paste
2 tbsp. Fish Sauce
1 tbsp. Palm Sugar
½ cup Green Beans, Cut Into Pieces
½ cup Kaffir Lime Leaves, Sliced
2 tbsp. Vegetable Oil
Heat the vegetable oil in a wok or large pan over medium heat. Add the red curry paste and stir-fry until fragrant.
Add the pork or chicken to the pan and continue stir-frying until it's nearly cooked through.
Add the fish sauce and palm sugar to the pan, stirring well to dissolve the sugar and coat the meat in the sauce.
Add the green beans and kaffir lime leaves to the pan, continue stir-frying for a few more minutes until everything is well combined and the meat is fully cooked.
Serve the stir-fry hot, ideally with a side of steamed jasmine rice.
