Kao Niew Ma Muang (Mango Sticky Rice)

1 cup Glutinous (Sticky) Rice
2 cups Coconut Milk
½ cup Sugar
½ tsp. Salt
2 Ripe Mangoes, Sliced
2 tbsp. Toasted Sesame Seeds

Rinse the sticky rice under cold water until the water runs clear. Then soak the rice in enough water to cover for at least 4 hours or overnight.

Drain the rice and steam it until it's tender and sticky.

In a saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar is dissolved. Pour half of this coconut milk mixture over the steamed sticky rice and let it soak for about 20 minutes.

To serve, place a scoop of the coconut-soaked sticky rice on a plate, top with slices of ripe mango, and drizzle with the remaining coconut milk sauce. Sprinkle with toasted sesame seeds for a bit of crunch.
